Sauteed Beef Tenderloin:

Yields 6 portions

1 pound of beef tenderloin
salt, pepper, cummin
1/2 teaspoon of oregano
2 red onions cut in stripes
1 garlic clove
1 green chile cut in stripes (very thin ones)
2 Tspoons of vinager
2 tomatoes cut in triangles
1 Tspoon parsley chopped
1 pound of potatoes (cut as french fries)
Vegetable oil

In a big souce pan heat the oil, fry the meat cut in 1 inch by 1/2 inch pieces , add salt, cummin and pepper and oregano. When the meat is fried (but not overcooked) take it out and set aside, in the same pan and oil, add the onions, garlic, chile and vinager. Cook for a about 3 minutes, add tomatoes and mix well, put the meat back in the sauce pan and add the parsley.
Fry the potatoes in abundant hot oil and when they are ready, add them to the meat and vegetables.
We serve this dish with white rice.

You can always buy the french fries, but the receipe is better with home made fries.
